There are a couple of options..you could try using a thread repair tool, which looks a little bit like a tap, and can sometimes re-thread them if they aren't too bad. This is not the same as a tap & die set, but similar. I found one at Sears...I think it was called a re-threading kit.
There is probably enough shoulder that you can afford to go up one size..drill out and re-tap to the next larger size. - I would wait and let someone like Dave Neptune chime in..he's the carb guru around here.
Of course a more costly option would be a replacement carb from Moyer.
One of the 'upgrades' that came along with my Indigo PCV kit was studs to go in the carb flange instead of bolting it..once you solve your initial problem, this may help avoid stripping in the future, or stripping the still good side.
I've changed quite a few things from bolts over to studs after learning of the benefits (a stud pulls on the threads differently than a tightening/twisting bolt), including my exhaust flange, and water jacket side plate..the next time I take apart the valve cover, that will be next.
