First, WELCOME to the forum!

Vapor in the exhaust could be normal depending on surrounding air and water temps.
A temp of 180° is actually a normal range for fresh water cooled.
How confident are you in your temp gauge?
Do you have access to a temp gun?

Also the "sea water ejector" is called a Water Lift (see pic)
