For future reference, if you can get in the water, you can do a lot with your stuffing box without hauling the boat.

It's straightforward to warm modeling clay in your hands and stuff it around the shaft from the outside (into the shaft log). Even if you disconnect the coupling from the engine, as long as you support the shaft from inside the boat the clay will seal quite well, barely a drip a minute. Water pressure will keep the clay seal in place for weeks if necessary. I had a plug like this in place while my A4 was rebuilt, although I was a liveaboard so I didn't leave the boat unattended for more than a day or two at a time.

You don't have to dig out every iota of the clay when you're done. (I used a wire coathanger.) Once you get the bulk of it out the rest will soon fall out on its own.
