Throttle cable attachment

My old Morse shift/throttle levers are located in the cockpit where people (ok, I) have a tendency to accidentally kick them, step on them, etc. Quite often, this results in the throttle cable wire pulling out of the little barrel/screw fitting on the carburetor.
So I have two queries:

1-Is there a better way to fasten the cable to the carburetor?
2-Does anyone have any experience or recommendations for upgrading their control mechanism?

Shift/throttle levers

I once saw a boat that used winch handles for the throttle and shift levers. I thought that was the coolest thing ever since there is always one close at hand, they're easily removable, and everyone already owns them. One day, I'll get around to doing this on my boat as I have the same problems you do.
