    140 F. spark plugs carboned

I upgraded to the newer thermostat and it works great. It runs an even 140F but now ALL the plugs carbon up. Previously some ran clean, others carboned.
Would it be ok to use a 160F thermostat?

Sure, you could use a hotter stat, but may I suggest you lean out your carb settings first and see how that goes? I run even colder than you with no thermostat whatsoever, and don't get much soot.

      Not the temp

I run 125 degrees with the stock plugs and they're always a clean tan color. May just need a timing adjustment, tune-up and/or carb adjust.
Double check that your choke is not staying closed while yer' at it.
