That is a marine-grade 1/4"plywood with a teak/holly veneer. You can probably find it nearby given the all the boating activity in your area. It isn't cheap as I paid $115 for a 4x8 sheet. I finished the surface with Helmsman Spar Urethane and it has held up well considering the abuse heaped upon it. Urethane is pretty tough stuff and most everything that has spilled has come off even a couple of drips of Brightside urethane. The original flooring Tartan put in was cork, which is kind of nice under foot, but it gets dirty quickly. I also looked at the new faux-teak stuff (NuTeak, FlexiTeak), but that stuff is really expensive. Overall, I've been happy with the teak/holly veneer. If I had it to do over again, I'd most likely go with the same thing. Shoot me a note anytime as you work through your projects. I've done a LOT of them this past 18 months!
